This, this is one of those comfort foods that exist in life... my mom made this dish when I was a kid.. well, ok, not exactly.. for some old-wives-tale reason, my mom never liked pressure cookers; but heck I like 'em!... so this recipe varies somewhat on what my mom used to cook for us, usually on Wednesdays .. weird, I know..
Ingredients
2 lbs chuck roast
6 small potatoes cleaned, whole
3 carrots, cut in half
1 1/2 c. orange, apricot or pineapple juice
1/4 c. white wine
1 sprig of thyme
1 tablespoon corn starch
Salt and pepper to taste
Procedure
- Salt the hunk 'o meat on all sides at least 20 minutes before searing
- Sear the hunk 'o meat on all sides preferably in the bottom part of your pressure cooker
- Remove said hunk 'o meat from flame
- Add white wine and scrape bottom of pot to deglaze
- Arrange potatoes and carrots at the bottom of the pot and place the meat on top
- Add the thyme
- Let cook for 1 hour after the pot starts hissing at low heat
- Let the pressure escape the pot or cool it down under the faucet
- Remove meat and 'taters and reserve
- Add the corn starch and quickly mix over low to medium flame
- Add salt and pepper to taste and move to a gravy boat or similar vessel
- Slice meat and serve, with sauce on top.. or not.. on the side is ok too, I guess
